Goat Cheese Soufflé

Ingredients
2 T butter
2/3 cup milk
5-6 oz Rainbeau Ridge goat cheese
½ tsp salt
¼ tsp pepper
¼ tsp nutmeg or ground sage (optional)
2 egg yolks*

4 egg whites*
Bread crumbs

Directions

  • Preheat oven to 350o. Prepare 4** individual size ramekins with butter and dust with breadcrumbs (tap out excess).
  • Melt butter in saucepan over medium heat; Add flour slowly and whisk thoroughly. Whisk in milk and simmer until thick. Keep whisking—this should take about 4-6 minutes.
  • Add half the goat cheese and whisk until smooth. Add seasoning.
  • In separate bowl, whisk egg yolks and then whisk into hot mixture.
  • Beat egg whites in a mixer until stiff (but not dry). Add ¼ of the whites into mixture before folding in remaining whites. Add remaining goat cheese by gently folding to incorporate.
  • Divide mixture into prepared ramekins. Place all in a water bath (rectangular baking dish filled with water to come up ½ height of ramekin).
  • Bake until golden and puffy—about 25 – 30 minutes.
  • Soufflés can be served in the ramekin or gently removed and served on a bed of your favorite greens.
  • Enjoy!

*Eggs should be room temperature

**Depending upon your eggs, this may yield 5 portions.
