Cider-Glazed Apple Muffins
(makes about 12 large muffins)
Ingredients
2 granny smith apples (or other fresh apples good for baking)
2 cups of flour
3 teaspoons of baking powder
½ teaspoon of salt
1 teaspoon cinnamon
6 tablespoons butter
½ cup brown sugar
4 tablespoons of cider
2 large eggs
For the Glaze
2 cups cider
2 tablespoons sugar
cheese cloth
Directions
- Preheat oven to 400F and grease (or spray) muffin tins
- Core and peel and cut apples into ¼ inch dice.
- In a large bowl, sift together flour, baking powder, cinnamon and salt.
- In a saucepan, melt butter and stir in brown sugar. Remove pan from heat, let cool before next step.
- Whisk cider and eggs into the butter mixture until smooth.
- Add cider, egg, butter, sugar mixture to flour mixture, stirring until combined well.
- Divide batter among muffin cups and bake for 15 minutes or until golden.
Make the glaze while muffins are baking.
- In a pan, put the cider to boil for 15 minutes or until it is reduced to a 1/2cup.
- Pour the cider through the cheese cloth that has been lined in a sieve to remove the sediment. Return cider to cleaned pan and add sugar.
- Simmer mixture, stirring, until syrupy, about 5 minutes.
- After muffins are done, and while they are still warm, with a wooden pick make several holes in top of each muffin.
- Brush warm glaze over muffins several times until absorbed.
