Warm Arugula Salad

ingredients
Arugula (enough for the number and size of salads you wish to serve -- approximately 1/2 pound for four servings)
1/2 pound shiitake mushrooms
1 tbsp soy sauce
1 tbsp rice vinegar, seasoned
1 tbsp mirin (rice wine for cooking)
Walnuts, other nuts, goat cheese optional

Directions

  • Arrange arugula on individual serving dishes.
  • Mix soy sauce, vinegar and mirin.
  • Pour liquid mixture in saute pan.
  • Add shiitake mushrooms and saute until tender.
  • Let cool 5 minutes.
  • Put mushrooms, still warm, over raw arugula.
  • Top with walnuts, other nuts, and/or goat cheese, as desired.
  • Enjoy immediately.
