Goat Cheese Cheesecake

Ingredients
¾ pound Rainbeau Ridge goat cheese
¾ cup sugar
Juice of ½ lemon
Zest of 1 lemon
1 tsp vanilla
6 eggs (separated)
3 T flour

Optional
Strawberries
Peaches and blueberries
Freshly made preserves, jams or jellies
Whipped cream

Directions

  • Preheat oven to 350o.  Butter a 9” spring form pan and then dust with sugar.
  • Combine cheese, sugar, lemon juice, lemon zest and vanilla and beat with electric mixer until smooth. Incorporate yolks one at a time. Add flour on low speed until just combined.
  • In a clean bowl, beat egg whites until firm
  • Add 1/3 of whites into cheese mixture to lighten and then fold in remaining whites.
  • Pour batter into prepared pan and bake until golden (about 45 minutes). Cool completely before serving.
  • Can top with berries (or peaches and blueberries, preserves, jams or jellies) and whipped cream or dust with powdered sugar .
  • Enjoy!
