Baked Apple & Goat Cheese

Ingredients
4 Granny Smith apples
8 oz Rainbeau Ridge goat cheese
1/3 cup currants or golden raisins
1/3 cup walnuts chopped
1/3 apple cider vinegar

Directions

  • Preheat oven to 375o
  • Soak currants in cider vinegar
  • Wash and peel apples; halve along “equator”; level by cutting off top or bottom of each half; core each piece and make a well in each half to create a spot for stuffing
  • Bake empty apples for 10 minutes
  • Drain currants; then mix currants, nuts and cheese
  • Stuff pre-baked apples and bake 10 more minutes
  • Enjoy!
